Start by browning your shanks.

Once you have browned the Shanks place them in the baking dish,
with the liquid, herbs and the vegetables
with the liquid, herbs and the vegetables

Cook for a while, make sure you turn them regularly so they stay all nice and juicy.

After a while the meat will start to come away from the bone and the vegetables will be soft.

Now your ready to remove the meat and vegetables and reduce the liquid to make a sauce.

And plate up and most importantly! eat!
Here is where i got the recipe from if you would like to try it.

Here are some of my Favorite images from out trips away.
This was as Fingal Bay, Steve took us for a drive to find a quiet beach with not to much surf so Cooper could have a swim.Cooper is getting game with the bread and a hungry Pelican.
Cooper running back for more bread for his new friend.
This was taken as The Entrance, this hungry little fellow hovered in front of me for 5 mins waiting for a hot chip.
See what creatures do for a good hot chippy!
This guy kept a watchful eye on us as we took a walk along the jetty at Newcastle.

This is what I woke to this morning, the mind boggles when you wake up to see the world has turned red! once stepping outside you could smell the dust and dirt in the air. it turns out that the huge wind storm last night caused all the dirt to be lifted up and placed over the town. good thing the windows were closed. we would have red dust everywhere!
